Two Friends, Two Cultures, One Kitchen
Biblos is built on friendship. Two mates at UWE, Ariel and Will, bonded over a shared love of bold, exciting flavours. In the early 2000s, they had a revelation, Middle Eastern flatbreads, with fresh salad & herbs paired with the rich, spiced depth of Caribbean jerk marinaded meaty and veggie fillings created something truly special.
From that moment, the journey began. What started as an experiment with flavours quickly evolved into a wider exploration of how these two incredible culinary traditions could come together. As they perfected their craft, they discovered more ways to fuse the warm spices and slow-cooked richness of Caribbean cuisine with the fragrant herbs and delicacies of the Middle East.
With an ever-growing following, Ariel and Will turned their passion into Biblos—a local favourite that’s become a staple of Bristol’s food scene. What started as a small idea between friends has grown into a much-loved independent eatery, known for its big flavours, welcoming atmosphere, and commitment to quality.
But the journey doesn’t stop there. Biblos continues to push the boundaries of Caribbean and Middle Eastern fusion, serving up dishes packed with soul, spice, and creativity.
