Food to share with friends

Caribbean and Middle Eastern fusion food

Biblos has always been about bold flavours and good friends.

Every meal you enjoy with us is packed full of fresh ingredients, authentic flavours, all homemade and all in proper portion sizes.

Our fusion food is all about bringing together the best bits of food cultures. At Biblos, we’ve combined classic Middle Eastern breads, salads, and sauces with Caribbean spices and cooking techniques.

Biblos is UK’s first Carribbean Middle Eastern fusion restaurant. We’re proud to have become a staple of the Bristol independent food scene in two busy city- centre locations.

About Will and Ariel

Passionate about flavour

Two friends, two cultures, two restaurants

Biblos is built on friendship. Two mates at UWE, Ariel and Will, bonded over a shared love of bold, exciting flavours. In the early 2000s, they had a revelation, Middle Eastern flatbreads, with fresh salad & herbs paired with the rich, spiced depth of Caribbean jerk marinaded meaty and veggie fillings created something truly special.

From that moment, the journey began. What started as an experiment with flavours quickly evolved into a wider exploration of how these two incredible culinary traditions could come together. As they perfected their craft, they discovered more ways to fuse the warm spices and slow-cooked richness of Caribbean cuisine with the fragrant herbs and delicacies of the Middle East.

With an ever-growing following, Ariel and Will turned their passion into Biblos—a local favourite that’s become a staple of Bristol’s food scene. What started as a small idea between friends has grown into a much-loved independent eatery, known for its big flavours, welcoming atmosphere, and commitment to quality.

But the journey doesn’t stop there. Biblos continues to push the boundaries of Caribbean and Middle Eastern fusion, serving up dishes packed with soul, spice, and creativity.

Supporting other Bristol independents

Even more than great food

That’s why we collaborate with other food businesses, like TukTuk. We work with Team Love, Bristol Wood Project, Montpelier High School, BIMM, Interculture, St Mungo’s, People’s Republic of Stokes Croft and SARSAS.

When you visit us, you’ll notice the packaging for our wraps, sauces, and fries are all biodegradable, recyclable, and sustainable. Our signs, Furniture, and logos all look great because of the great Bristol people we partner with.

Check out our merchandise which was designed and created in collaboration with incredible Bristol artists and designers, such as Andrew Bourne and Suzie Eland
